First Impressions

HP Juniper has been quietly building one of Quebec's most interesting NA spirit lineups, and the Single Malt Whiskey is their most serious pour. Hand-distilled in a traditional copper pot, this is the kind of bottle that earns its spot on a proper home bar shelf. I wanted to see if it could hold its own in a real whisky glass, without apologies.

The 750mL bottle has genuine weight to it. The label is dark and confident, designed to signal that this is a spirit, not a mixer. Pour it neat and the liquid settles into a warm amber, catching the light the way a decent whisky should. That copper distillation is clearly doing its job.

The nose opens with a soft apple sweetness that feels immediately familiar and comfortable. Then the anise comes through behind it, adding an herbal complexity that whisky drinkers will recognize as something considered and intentional. It is not peat and it is not oak, but it is not pretending to be either.

How it actually tastes

The first sip leads with that apple note, softer and rounder than a traditional Scotch but genuinely pleasant. The malt distillate base gives the whole thing a grounded, slightly earthy quality that synthetic NA spirits usually miss entirely. Mid-palate, the anise lifts the flavor without overwhelming it.
