Non-Alcoholic Eggnog with Gingerbread Spice (Easy Recipe)
This non-alcoholic eggnog is the classic holiday recipe made with Captain Morgan 0.0, an alcohol-free spiced spirit, plus ginger syrup, cinnamon and nutmeg for a gingerbread taste. It makes about 6 mugs in 15 minutes.
The eggs are not cooked, so use pasteurized eggs, or follow the cooked version in the advice below.
Ingredients
1 cup (250 ml) of Captain Morgan 0.0
1/2 cup (125 ml) of ginger syrup
4 pasteurized eggs, yolks and whites separated
1/2 cup (125 ml) of sugar, divided
3 1/2 cups (875 ml) of milk
1 cup (250 ml) of 35% cream
1/2 tsp (3 ml) of ground cinnamon
1/2 nutmeg, freshly grated (or 1/2 tsp ground)
Cinnamon sticks and mint, for garnish
Preparation
Separate the eggs: Put the yolks in one bowl and the whites in another.
Whisk the yolks: Whisk the yolks with 1/4 cup of the sugar until smooth and pale.
Build the base: In a punch bowl, mix the yolk mixture with the Captain Morgan 0.0, ginger syrup, milk, cream, cinnamon and nutmeg.
Whip the whites: Add the rest of the sugar to the whites and whip until stiff peaks form.
Fold and serve: Fold two thirds of the whipped whites into the punch bowl, then ladle into mugs.
Garnish: Top each mug with a spoonful of the remaining whites, a pinch of cinnamon and a sprig of mint.

Use pasteurized eggs: The eggs stay raw in this recipe, so pasteurized eggs are the safe choice, especially for children, pregnant guests and older guests.
Cooked version: Warm the milk and cream, then whisk a little of it into the yolks and sugar. Pour everything back into the pot and stir on low heat until it thickens slightly and reaches 71 °C (160 °F). Chill, then add the Captain Morgan 0.0, syrup and spices.
No ginger syrup? Simmer 1/2 cup of sugar, 1/2 cup of water and a thumb of sliced fresh ginger for 10 minutes, then strain and cool.
Make ahead: The base keeps 1 day in the fridge. Whip and fold the whites just before serving.

- Different spiced spirit: Use NOA Spiced Rum instead of Captain Morgan 0.0.
- Lighter: Replace the cream with more milk.
- Dairy-free: Use oat milk and coconut cream, and skip the egg white topping.
